Spicy Macerated Asparagus Salad

If you're like us, and you like a simple salad that you can make in advance and it only gets better as time goes on - you'll want to try this Macerated Asparagus Salad! Asparagus is one of the first vegetables to grow in the spring, so this is the perfect time to try a new flavor-packed Asparagus Salad. *Recommended to make 2-3 days in advance to allow dressing to penetrate.



Ingredients:
- 2 bunches of Asparagus, chopped on an extreme bias.
- 1/4 Cup Red Wine Vinegar
- 2 Tbl Olive Oil
- Salt and Pepper to Taste
- 1/4 Parmesan, shaved
- 2 Tbl Micro-planed Pistachios

How to make Spicy Macerated Asparagus Salad:
1. Combine Asparagus, Rocoto, Red Wine Vinegar, Olive Oil and Salt and Pepper in a large bowl or in a large zip lock bag. Stir or shake to combine. 
2. Place in the fridge for *ideally* 2 days. You can enjoy it right away, but the flavor will penetrate the asparagus as time goes on.
3. When you are ready to enjoy, plate in a large serving bowl, shave parmesan and pistachios over the top and serve!
